Gnocchi & Farmer Sausage
Ready in 30 minutes
Serves 4 people
Ingredients
2 farmer sausage links
450 g gnocchi
1 medium red onion
1 small zucchini thinly sliced in rounds
1 yellow pepper
2 cloves of garlic crushed
¼ cup goat cheese
½ cup grape tomatoes halved vertically
Parsley for garnishing
Salt and pepper to taste (note)
Preparation
Boil gnocchi as per package’s instructions; drain and set aside
Cut farmer sausage in ½ inch thick slices; fry and set aside – reserve the oil in the pan.
Depending on how lean your sausages are, you might want to add some olive oil; fry the onion, zucchini and pepper for 4-6 minutes. Add garlic and continue to fry for 1 minute
Add tomato and gnocchi and continue frying for another 1-2 minutes
Reduce heat; reintroduce the sausages and add the goat cheese.
Garnish with parsley and serve.
Tips
I added no salt or pepper because the sausage and cheese gives it a nice kick; also, the gnocchi water is salted
