Gnocchi & Farmer Sausage

Ready in 30 minutes

Serves 4 people


Ingredients

  • 2 farmer sausage links

  • 450 g gnocchi

  • 1 medium red onion

  • 1 small zucchini thinly sliced in rounds

  • 1 yellow pepper

  • 2 cloves of garlic crushed

  • ¼ cup goat cheese

  • ½ cup grape tomatoes halved vertically 

  • Parsley for garnishing 

  • Salt and pepper to taste (note)

Preparation

  1. Boil gnocchi as per package’s instructions; drain and set aside

  2. Cut farmer sausage in ½ inch thick slices; fry and set aside – reserve the oil in the pan. 

  3. Depending on how lean your sausages are, you might want to add some olive oil; fry the onion, zucchini and pepper for 4-6 minutes. Add garlic and continue to fry for 1 minute

  4. Add tomato and gnocchi and continue frying for another 1-2 minutes

  5. Reduce heat; reintroduce the sausages and add the goat cheese. 

  6. Garnish with parsley and serve. 

Tips

I added no salt or pepper because the sausage and cheese gives it a nice kick; also, the gnocchi water is salted
